The stuffed eggplant rollups were great, the wife loved them. For the stuffing I mixed ricotta with an egg, salt and pepper, a little garlic powder, some various Italian cheeses, and some fresh chopped spinach. I had plenty left over so I made some stuffed shells too, and froze a bunch and cooked a bunch. I served it all with a garden salad, and fusilli and meatballs, too - for my two younger finicky kids. A great meal if I do say so myself, very "comforting". (get that KoQ
)

Weather was so nice yesterday that I threw 3 racks of spares on the drum while working around the house. Very light rub, hickory smoke for 6 hours, no sauce, yum.
